Quite often the sun can be too bright and harsh to look at on a person face. While there are many diffusions that will work, most will flatten the image make it look unnatural. On this particular shot, in Destin, FL we used a half soft-frost diffusion which allows the sunlight to come through and still create contrast without flattening the image.
